Ever since I was a kid, I have loved chocolate cookies!! I always chose cookies over ice-cream or chocolate. But now as I don’t eat processed food anymore, I’m always trying to find healthy alternatives for my cravings. Who said I have to eat carrots and apples all the time??
So one day I was CRAVING for cookies like Oreos. And of course, I googled straight away and stumbled upon this Healthy Living with Chocolate blog, where I founded this recipe. These are healthy, paleo, gluten- and dairy free.
And I can tell you this…One A Day Keeps The Sugar Cravings Away😀 These are super delicious, but also very filling, because of the coconut oil and almond content. Best to eat them at room temp!
⅓ cup dark chocolate chips
⅓ cup coconut oil, melted
½ teaspoon vanilla extract
1 egg, room temperature
1 cup almond flour
⅓ cup raw cacao powder
¼ teaspoon baking soda
⅛ teaspoon salt
3 tablespoons coconut oil, melted
1 tablespoon raw honey
1 teaspoon vanilla extract
¾ cup almond flour
¼ cup dark chocolate chips
⚪melt chocolate chips in a bowl over simmering water (double boiler)
⚪remove bowl from heat and whisk in the coconut oil, vanilla extract and egg
⚪in a separate bowl, mix together the almond flour, raw cacao powder, baking soda and salt
⚪mix wet and dry ingredients together gently using a rubber spatula, just until ingredients are combined
⚪cover the dough and freeze for about 15 minutes
⚪using a rolling pin, roll chilled dough in between two sheets of parchment paper to ¼-inch thickness
⚪cut cookies with a round 2-inch cookie cutter. If the dough gets sticky or is hard to work with, return it to the freezer for another 10-15 minutes. Working with the dough cold is a lot easier, so return it to the freezer as necessary.
⚪bake cookies on a cookie sheet lined with parchment paper for 10-12 minutes at 350°F
⚪let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack
⚪in a large bowl, whisk together the coconut oil, honey and vanilla extract
⚪add the almond flour and chocolate chips and using your hands, gently mix ingredients together. Do not over mix the dough or it will get oily.
⚪roll cookie dough into small balls (I used about 2 teaspoons of cookie dough per cookie)
⚪press cookie dough in between two Oreo cookies gently so that the cookies do not break
This recipe makes about 13 Oreos. Store in an airtight container at room temperature or in the refrigerator.
