Avocado chocolate mousse has been one of my favourite desserts for many years. And it’s very easy to prepare, you only need 4 ingredients! You can choose between various healthy sweeteners! The one in the picture is made with dates. This dessert has a low glycemic load, which means that it doesn’t raise your blood sugar too much too fast.
Balancing blood sugar levels is important both in weight loss and in maintaining a normal weight, but also in support of overall health (to increase energy levels, to balance hormones and emotions). Also, our brain activity is strongly linked to blood glucose levels. (Toitumisteraapia No. 25, p. 13)
- 2 big very ripe avocados!
- 2-3 tbsp raw cacao
- Choose your sweetener: 4 soft Medjool dates / 1 ripe banana / 1-2 tbsp xylitol / 1-2 tbsp coconut nectar or coconut sugar
- 2-4 tbsp plant-based milk like almond-, coconut- or oat milk
Cut avocados into halves, remove stones and scrape the pulp into a bowl or straight into a blender. Add the rest of the ingredients. Blend until completely combined. It should make about 2-3 servings! You can also keep it in the fridge for a few days.
Serve with berries, nuts and seeds!
